Oven baked Salmon and Pea Quinoa Risotto
Many people shy away from making a risotto thinking that it is time consuming. This is an oven baked version that tastes just as good but with very little effort. This recipe uses salmon but any fish or chicken could be used. The chicken of course would take longer to bake.
Ingredients
Serves 4.
4 individual salmon fillets.
Olive oil
1 lemon
Seasoning
Risotto
1 large onion peeled and finely diced.
1 large clove garlic peeled and crushed.
1 tblsp olive oil
150grms/5oz Arborio risotto rice
150grms/5oz Quinoa
1 litre/1 ¾ pts light vegetable stock
Seasoning
350grms/12oz frozen peas.
1 tblsp fresh chopped parsley.
Method
1. Preheat oven gas 5 elec 190’C. Fry the onion and garlic in olive oil till soft but not browned.
2. Add the rice and quinoa and stir fry for a couple of minutes till grains are well coated with the oil.
3. Add the hot stock, bring to the boil, stir once and place into an oven proof dish.
4. Bake in the oven uncovered for 20mins.
5. In the meantime cook the peas in a little salted water for 5mins till just soft. Take half of the peas and puree with 2 tblsps water.
6. Place the salmon fillets in individual foil pieces big enough to form into a parcel, season, squeeze over the lemon juice and wrap into a parcel. place on a baking tray.
7. Take risotto out of oven and stir in the chopped parsley. Return to the oven for a further 10mins along with the salmon parcels.
8. Stir the peas into the grains. Check seasoning and ready to serve.
An interesting dish
The quinoa is very rich in protein, calcium and magnesium both of which are needed for good bone health. Magnesium is needed by every cell of the body to produce energy. So vital if you have low energy or are recovering.
The peas are also a good source of protein and vitamin C which helps to boost the immune system.
Parsley is a very under used herb. It is deceptively nutritious, very high in vitamin C and vitamin B6. Vitamin B6 works together with magnesium enhancing its properties.
